Iced Gyokuru Tea

Serves 2

A very potent, very pricey, well worth trying summer drink

  • 2 Tbsp. gyokuru tea leaves
  • ½ cup cold water
  • 2 ice cubes
  1. Place tea in a small teapot, bowl, or even jar (the Japanese use a tiny, 120-ml kyusu pot with a built-in strainer) and add water and ice cubes.
  2. Let sit 15 minutes. Strain and pour into small (2-oz) cups. Sip slowly — it’s very potent!
  3. The tea leaves may be steeped up to 3 times.
