Iced Gyokuru Tea

A very potent, very pricey, well worth trying summer drink
- 2 Tbsp. gyokuru tea leaves
- ½ cup cold water
- 2 ice cubes
- Place tea in a small teapot, bowl, or even jar (the Japanese use a tiny, 120-ml kyusu pot with a built-in strainer) and add water and ice cubes.
- Let sit 15 minutes. Strain and pour into small (2-oz) cups. Sip slowly — it’s very potent!
- The tea leaves may be steeped up to 3 times.
